Description

This delicious grilled chicken is marinated in a honey mustard dressing, topped with BBQ sauce, crispy bacon, and melted cheddar cheese for a restaurant-quality meal.


Ingredients

  • 4 thinly sliced chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 4 to 6 slices bacon
  • 1 cup BBQ sauce, plus extra for serving
  • 1 cup grated cheddar cheese (or 4 slices of cheddar)
  • 1/4 cup chopped red onion
  • Fresh cilantro, chopped
  • Pickled jalapeños (optional)


Instructions

  1. Whisk together olive oil, honey, Dijon mustard, salt, and pepper in a bowl until emulsified. Transfer 1/4 cup of marinade to a bowl for basting.
  2. Marinate chicken in the remaining marinade for at least 30 minutes.
  3. Cook bacon until crispy, either in a skillet or in the oven, then chop.
  4. Preheat the grill to medium heat. Grill marinated chicken for 6-9 minutes per side until it reaches 160°F, basting with reserved marinade.
  5. In the last few minutes, sprinkle cheese over the chicken to melt.
  6. Top with BBQ sauce, crumbled bacon, cilantro, red onion, and pickled jalapeños. Serve immediately.

Notes

For best results, use thin-sliced chicken breasts to ensure even cooking. Reserve some marinade before it touches raw chicken to use for basting.
