Description
This delicious grilled chicken is marinated in a honey mustard dressing, topped with BBQ sauce, crispy bacon, and melted cheddar cheese for a restaurant-quality meal.
Ingredients
- 4 thinly sliced chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 cup extra-virgin olive oil
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 4 to 6 slices bacon
- 1 cup BBQ sauce, plus extra for serving
- 1 cup grated cheddar cheese (or 4 slices of cheddar)
- 1/4 cup chopped red onion
- Fresh cilantro, chopped
- Pickled jalapeños (optional)
Instructions
- Whisk together olive oil, honey, Dijon mustard, salt, and pepper in a bowl until emulsified. Transfer 1/4 cup of marinade to a bowl for basting.
- Marinate chicken in the remaining marinade for at least 30 minutes.
- Cook bacon until crispy, either in a skillet or in the oven, then chop.
- Preheat the grill to medium heat. Grill marinated chicken for 6-9 minutes per side until it reaches 160°F, basting with reserved marinade.
- In the last few minutes, sprinkle cheese over the chicken to melt.
- Top with BBQ sauce, crumbled bacon, cilantro, red onion, and pickled jalapeños. Serve immediately.
Notes
For best results, use thin-sliced chicken breasts to ensure even cooking. Reserve some marinade before it touches raw chicken to use for basting.
