Description

These fluffy cottage cheese oatmeal pancakes are high in protein, naturally gluten-free, and blended in just minutes. They’re perfect for busy mornings when you need steady energy and satisfying flavor to power through your day.


Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup cottage cheese
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon (optional)
  • 1/4 tsp baking powder
  • Pinch of salt
  • Butter or oil for cooking


Instructions

1. Add oats, cottage cheese, eggs, vanilla, cinnamon, baking powder, and salt to a blender.

2. Blend until completely smooth.

3. Heat a nonstick pan over medium heat and lightly grease.

4. Pour 1/4 cup of batter for each pancake.

5. Cook for 2–3 minutes until bubbles appear on top, then flip.

6. Cook another 1–2 minutes until golden and firm.
