Description

A lighter version of the classic buffalo chicken dip made with cottage cheese for a high-protein appetizer that tastes indulgent.


Ingredients

  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 tablespoon olive oil
  • ¼ cup buffalo sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup shredded chicken breast
  • 1 cup diced red bell pepper
  • 2 green onions, sliced
  • ¼ cup shredded cheddar cheese, plus extra for topping


Instructions

  1. Preheat the air fryer to 375°F and grease a medium oven-safe ceramic dish.
  2. Blend the cottage cheese, olive oil, buffalo sauce, garlic powder, onion powder, salt, and black pepper until completely smooth.
  3. Pour the blended mixture into a large bowl and stir in the shredded chicken, diced red bell pepper, sliced green onions, and cheddar cheese until evenly combined.
  4. Spoon the mixture into the greased dish and sprinkle additional cheddar cheese on top.
  5. Air fry for 8-10 minutes until bubbly and golden brown.
  6. Serve hot with tortilla chips, crackers, or sliced vegetables.

Notes

For a vegetarian version, omit the chicken and add extra veggies. You can also prepare the dip ahead by refrigerating it before cooking.
