Description
A lighter version of buffalo chicken dip made with cottage cheese for a high-protein, creamy appetizer without sacrificing flavor.
Ingredients
- 1 cup cottage cheese (low-fat or full-fat)
- 1 tablespoon olive oil
- ¼ cup buffalo sauce
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
- 1 cup shredded chicken breast
- 1 cup diced red bell pepper
- 2 green onions, sliced
- ¼ cup shredded cheddar cheese, plus extra for topping
Instructions
- Preheat your air fryer to 375°F and grease a medium oven-safe ceramic dish.
- Blend cottage cheese, olive oil, buffalo sauce, garlic powder, onion powder, salt, and black pepper in a blender until completely smooth.
- In a large mixing bowl, combine the blended mixture with shredded chicken, diced red bell pepper, sliced green onions, and cheddar cheese. Stir until evenly mixed.
- Spoon the mixture into the greased dish and sprinkle additional cheddar cheese on top.
- Air fry for 8-10 minutes until the top is golden brown and bubbly.
- Serve hot with your favorite dippers like tortilla chips and fresh vegetables.
Notes
For a vegetarian version, omit the chicken and add more vegetables. Adjust buffalo sauce to taste for heat preference.
