Description

A lighter version of buffalo chicken dip made with cottage cheese for a high-protein, creamy appetizer without sacrificing flavor.


Ingredients

  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 tablespoon olive oil
  • ¼ cup buffalo sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup shredded chicken breast
  • 1 cup diced red bell pepper
  • 2 green onions, sliced
  • ¼ cup shredded cheddar cheese, plus extra for topping


Instructions

  1. Preheat your air fryer to 375°F and grease a medium oven-safe ceramic dish.
  2. Blend cottage cheese, olive oil, buffalo sauce, garlic powder, onion powder, salt, and black pepper in a blender until completely smooth.
  3. In a large mixing bowl, combine the blended mixture with shredded chicken, diced red bell pepper, sliced green onions, and cheddar cheese. Stir until evenly mixed.
  4. Spoon the mixture into the greased dish and sprinkle additional cheddar cheese on top.
  5. Air fry for 8-10 minutes until the top is golden brown and bubbly.
  6. Serve hot with your favorite dippers like tortilla chips and fresh vegetables.

Notes

For a vegetarian version, omit the chicken and add more vegetables. Adjust buffalo sauce to taste for heat preference.
