Description
Fudgy, chocolate-rich cottage cheese brownies made with whole wheat flour and naturally sweet ingredients. A guilt-free dessert packed with protein and flavor.
Ingredients
- ½ cup melted semi-sweet chocolate chips or chopped chocolate
- 1 cup cottage cheese
- 1 teaspoon vanilla extract
- 1 egg
- ¼ cup melted butter or avocado oil
- ¾ cup milk
- ½ cup sugar (or a low-glycemic substitute)
- ½ cup cocoa powder
- ¾ cup whole wheat flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ⅓ cup mini chocolate chips
Instructions
1. Preheat your oven to 350°F and line a 9×9″ baking dish with parchment paper or lightly grease it.
2. In a food processor, blend cottage cheese, melted chocolate, butter or oil, vanilla, egg, milk, sugar, and cocoa powder until smooth.
3. In a separate bowl, whisk flour, baking soda, and salt together.
4. Pour the wet mixture into the dry ingredients and stir until just combined.
5. Fold in mini chocolate chips, then pour the batter into your prepared pan.
6. Bake for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
7. Let cool before slicing into 16 delicious, protein-rich squares.
