A comforting and budget-friendly dish inspired by Popeye’s, filled with bold spices and hearty red beans.
Ingredients
- 1 cup dried red beans
- 4 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups cooked rice
- Green onions for garnish
Instructions
- Rinse the red beans thoroughly. Soak them in water overnight, then drain and set aside.
- Sauté the chopped onion, garlic, and bell pepper in olive oil over medium heat until softened, around 5-7 minutes.
- Add the smoked paprika, cayenne pepper, thyme, and bay leaf. Cook for an additional minute.
- Combine the soaked beans with 4 cups of water in the pot. Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours, until beans are tender.
- Season the dish with salt and pepper to taste.
- Serve the beans over cooked rice and garnish with chopped green onions.
Notes
For a richer taste, add a splash of hot sauce when serving. Can be made vegan by using plant-based sausage and vegetable broth.
