Description

A comforting and budget-friendly dish inspired by Popeye’s, filled with bold spices and hearty red beans.


Ingredients

  • 1 cup dried red beans
  • 4 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups cooked rice
  • Green onions for garnish


Instructions

  1. Rinse the red beans thoroughly. Soak them in water overnight, then drain and set aside.
  2. Sauté the chopped onion, garlic, and bell pepper in olive oil over medium heat until softened, around 5-7 minutes.
  3. Add the smoked paprika, cayenne pepper, thyme, and bay leaf. Cook for an additional minute.
  4. Combine the soaked beans with 4 cups of water in the pot. Bring to a boil, then reduce heat and let simmer for 1.5 to 2 hours, until beans are tender.
  5. Season the dish with salt and pepper to taste.
  6. Serve the beans over cooked rice and garnish with chopped green onions.

Notes

For a richer taste, add a splash of hot sauce when serving. Can be made vegan by using plant-based sausage and vegetable broth.
