A flavorful and versatile chicken recipe inspired by Chipotle, perfect for burritos, tacos, or salads.
Ingredients
- 4 lbs boneless skinless chicken thighs or breasts
- 4 garlic cloves, minced
- 1 small onion, quartered
- 1/4 cup distilled vinegar
- 2 tbsp ancho chili powder
- 2 tsp cumin
- 1 tsp dried oregano
- 4 tbsp oil (vegetable, canola, or rice bran)
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1 chipotle pepper in adobo sauce
- 2 tbsp adobo sauce
Instructions
- Marinate the chicken: In a large bowl, combine minced garlic, onion, vinegar, ancho chili powder, cumin, oregano, oil, salt, and black pepper. Mix well. Add the chicken, ensuring it’s coated entirely. Cover with plastic wrap and marinate in the fridge for at least 60 minutes (or overnight for deeper flavor).
- Cook the chicken:
- Grilling: Preheat your grill to medium-high heat. Grill the chicken for about 6-7 minutes per side or until internal temperature reaches 165°F.
- Stovetop: Heat a skillet over medium-high heat with a tablespoon of oil. Cook the chicken for 6-7 minutes on each side until browned and cooked through.
- Oven: Preheat your oven to 400°F. Place the marinated chicken in a baking dish and bake for 25-30 minutes until done.
- Finish: Allow the chicken to rest for 5 minutes before slicing.
Notes
For best flavor, marinate overnight. Use fresh ingredients for an elevated dish.
