Ingredients
- 1 1/2 cups sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups water
- 3 large egg yolks
- 1/4 cup butter
- 1/2 cup lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 prepared pie crust
- 3 egg whites
- 1/4 teaspoon cream of tartar
Instructions
- Preheat your oven to 350°F (175°C).
- Mix sugar, cornstarch, and salt in a saucepan.
- Gradually stir in water, then cook over medium heat, stirring until thickened.
- Beat the egg yolks in a bowl and slowly add some hot mixture to yolks. Return to saucepan and cook for an additional 2 minutes.
- Remove from heat and stir in butter, lemon juice, lemon zest, and vanilla extract.
- Pour the lemon filling into the prepared pie crust.
- Beat egg whites with cream of tartar until stiff peaks form. Spread meringue over the filling.
- Bake for 10-15 minutes, until meringue is golden.
- Allow to cool at room temperature before serving.
Notes
Store in the refrigerator for up to two days. For longer storage, freeze the lemon filling without the meringue for up to one month.
