Description
A bright and zesty citrus marinade for chicken that enhances flavors and tenderizes meat, perfect for grilling.
Ingredients
- 6 boneless, skinless chicken breasts or thighs
- ¼ cup fresh lime juice (from 2-3 limes)
- 1 teaspoon lime zest, finely grated
- ¼ cup fresh lemon juice (from 2-3 lemons)
- 1 teaspoon lemon zest, finely grated
- ½ cup fresh orange juice (from 2 large oranges)
- 8 cloves garlic, minced
- ⅓ cup vegetable oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 tablespoon sugar
- 2 teaspoons salt
- ½ teaspoon dried rosemary
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
Instructions
- Zest your citrus by finely grating lime zest and lemon zest; set aside.
- Juice the limes, lemons, and oranges to extract the fresh juice needed.
- Add all ingredients, including the zest, juices, minced garlic, oil, spices, sugar, salt, and dried herbs, to a blender or food processor and pulse until you achieve a uniform puree.
- Pour the marinade into a large zip-top bag and add chicken; seal the bag and turn to coat. Refrigerate for at least 20 minutes or overnight.
- Remove chicken from marinade and discard the marinade. Cook chicken according to preferred method: grill, bake, or stovetop.
- Allow cooked chicken to rest for 3-5 minutes before serving.

Marinating overnight is ideal for maximum flavor. Ensure to use fresh citrus juice for the best taste.
