Ingredients

  • 200 g dark chocolate (70% solids), finely chopped
  • 125 g unsalted butter, cubed
  • 125 g caster or granulated sugar
  • 90 g soft light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 130 g plain flour
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1-2 teaspoons flaked sea salt (optional)


Instructions

  1. Preheat your oven to 180°C (160°C for fan ovens) and line baking trays with baking paper.
  2. In a heatproof bowl, combine chopped dark chocolate and cubed unsalted butter over simmering water. Stir until melted and cool slightly.
  3. In a mixing bowl, beat caster sugar, brown sugar, eggs, and vanilla on medium-high speed for 5 minutes until pale and fluffy.
  4. Gradually pour the melted chocolate mixture into the egg mixture and beat on low until combined.
  5. Sift plain flour, cocoa powder, baking powder, and salt into a separate bowl, then gently fold into the wet mixture until just combined.
  6. Using a scoop, portion out dough onto prepared baking trays, leaving space between each cookie. Sprinkle with flaked sea salt if desired.
  7. Bake in the preheated oven for 12 minutes. Let cool for at least 20 minutes on the tray before moving to a wire rack.

Notes

Cookies can be stored in an airtight container at room temperature for 3-4 days or frozen for up to 3 months.
