Description

A flavorful blend of chipotle salmon, fresh salsa, and warm tortillas that brings friends and family together.

Ingredients

  • 1 lb salmon fillets
  • 2 tablespoons chipotle sauce
  • 1 tablespoon lime juice
  • 8 small corn tortillas
  • 1 cup corn (fresh or frozen)
  • 1 avocado, diced
  • 1 peach, diced
  • 1/4 cup cilantro, chopped
  • 1/2 cup Greek yogurt
  • 1 teaspoon spicy seasoning (like cayenne or chili powder)
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet. Brush them generously with chipotle sauce and lime juice, then sprinkle with salt.
  3. Bake the salmon for 12-15 minutes, or until it’s cooked through and flaky.
  4. Combine corn, diced avocado, peach, and cilantro in a bowl to make the refreshing salsa.
  5. Mix Greek yogurt with your chosen spicy seasoning—this will serve as your creamy sauce.
  6. Warm the corn tortillas in a skillet over medium heat until they are soft and pliable.
  7. Flake the salmon into bite-sized pieces once it’s ready.
  8. Assemble your tacos by placing salmon on each tortilla, topping with salsa, and drizzling with the spicy yogurt sauce.
  9. Serve immediately and enjoy the explosion of flavors!

Notes

Leftovers can be refrigerated for up to 2 days and reheated gently. For added flavor, marinate the salmon for 30 minutes before baking.
