Ingredients

  • 2 chicken breasts
  • 1 tablespoon chipotle seasoning
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheese
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas


Instructions

  1. Preheat your grill to medium heat. While it’s heating, season the chicken breasts with chipotle seasoning generously.
  2. Grill the chicken for about 6-7 minutes on each side until it’s fully cooked. Let it rest for a few minutes before slicing it into strips.
  3. In each tortilla, start layering with a portion of cooked rice, black beans, sliced grilled chicken, diced tomatoes, leafy lettuce, shredded cheese, and a generous drizzle of chipotle ranch dressing.
  4. Roll up each tortilla tightly, ensuring you enclose all the delicious fillings inside.
