Description

A vibrant shrimp bowl marinated in a zesty chipotle-lime sauce, layered over fluffy rice and topped with fresh ingredients.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons chipotle sauce
  • Juice of 2 limes
  • 2 cups cooked rice (white or brown)
  • 1 avocado, sliced
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup salsa
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Combine the shrimp with the chipotle sauce and lime juice in a medium bowl. Allow it to marinate for at least 15 minutes.
  2. Heat a skillet over medium heat. Add the marinated shrimp and cook for 2-3 minutes per side, or until they are pink and fully cooked through.
  3. Start with a layer of cooked rice in serving bowls.
  4. Add the cooked shrimp on top, followed by layers of black beans, corn, salsa, and avocado.
  5. Season with salt and pepper according to taste.
  6. Garnish with fresh cilantro if desired.
  7. Serve immediately and enjoy!

Notes

For an extra kick, add diced jalapeños or substitute black beans with pinto beans.
