A vibrant shrimp bowl marinated in a zesty chipotle-lime sauce, layered over fluffy rice and topped with fresh ingredients.
Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons chipotle sauce
- Juice of 2 limes
- 2 cups cooked rice (white or brown)
- 1 avocado, sliced
- 1 cup black beans, drained and rinsed
- 1 cup corn (canned or frozen)
- 1 cup salsa
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Combine the shrimp with the chipotle sauce and lime juice in a medium bowl. Allow it to marinate for at least 15 minutes.
- Heat a skillet over medium heat. Add the marinated shrimp and cook for 2-3 minutes per side, or until they are pink and fully cooked through.
- Start with a layer of cooked rice in serving bowls.
- Add the cooked shrimp on top, followed by layers of black beans, corn, salsa, and avocado.
- Season with salt and pepper according to taste.
- Garnish with fresh cilantro if desired.
- Serve immediately and enjoy!
Notes
For an extra kick, add diced jalapeños or substitute black beans with pinto beans.
