Delicious chicken quesadillas featuring gooey cheese, savory chicken, and vibrant veggies wrapped in a warm tortilla. Perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 4 large flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: Sour cream and salsa for serving


Instructions

  1. Heat the olive oil in a skillet over medium heat. Once hot, add the diced onions and bell peppers. Sauté them until they’re soft, about 5 minutes.
  2. Incorporate the shredded chicken into the skillet, seasoning with salt and pepper. Mix well and cook for another 2-3 minutes until everything is heated through.
  3. Lay one flour tortilla flat in the skillet. On one half, sprinkle half of the cheese. Top it with the chicken mixture and then add more cheese on top before folding the tortilla in half.
  4. Cook for about 3-4 minutes until the bottom is golden brown and the cheese melts, then flip and repeat on the other side.
  5. Remove the quesadilla from the skillet, cut it into wedges, and serve with sour cream and salsa.

Notes

Feel free to customize the filling with your favorite veggies or use leftover rotisserie chicken for quicker prep.
