Ingredients
- 1 pound chicken breast
- 1-2 bell peppers (any color)
- 1 large onion
- 8 ounces provolone cheese (or cheese of your choice)
- 4 hoagie rolls
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Slice the chicken: Thinly slice 1 pound of chicken breast and season it generously with salt and pepper.
- Cook the chicken: In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the seasoned chicken, cooking it until it’s browned and cooked through, about 5-7 minutes.
- Sauté the vegetables: Add sliced bell peppers and onions to the skillet. Sauté them together until they soften, which should take around 5 minutes.
- Assemble the sandwiches: Layer the chicken and vegetable mixture onto each hoagie roll. Top generously with provolone cheese, then melt it under a broiler if you like a gooey finish.
