  • 2 boneless, skinless chicken breasts
  • 1 bell pepper (any color), sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • Tortillas (flour or corn, depending on your preference)
  • Optional toppings: sour cream, salsa, guacamole


Instructions

  1. Begin by slicing the chicken breasts into thin strips.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken strips to the hot skillet. Cook until browned and no longer pink in the center, about 5-7 minutes.
  4. Toss in the sliced bell pepper and onion, stirring well.
  5. Sprinkle the fajita seasoning over the mixture and continue to cook until the vegetables are tender, around 3-4 minutes more.
  6. Warm your tortillas in a separate pan or microwave for a few seconds.
  7. Serve the chicken and veggies in the tortillas, and top with your choice of sour cream, salsa, or guacamole.

Notes
