Description

A vibrant grilled Mexican shrimp cocktail that’s refreshing, packed with flavor, and perfect for gatherings.

Ingredients

  • 1 lb (450g) large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Juice of 2 limes
  • 1 cup cocktail sauce
  • 1 avocado, diced
  • 1 cup cucumber, diced
  • ½ cup red onion, finely chopped
  • 1 jalapeño, minced (optional for heat)
  • Fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Marinate the shrimp: In a bowl, mix olive oil, paprika, garlic powder, lime juice, salt, and pepper. Add shrimp, tossing to coat. Let it marinate for about 15 minutes.
  2. Grill the shrimp: Preheat your grill over medium-high heat. Skewer the marinated shrimp and grill for 2-3 minutes per side until they are pink and opaque. Remove and let cool slightly.
  3. Prepare the cocktail: In a mixing bowl, combine cocktail sauce, diced avocado, cucumber, red onion, jalapeño (if using), salt, and pepper.
  4. Combine: Chop the grilled shrimp into bite-sized pieces and add to the cocktail mixture. Toss gently to combine.
  5. Serve: Chill briefly in the refrigerator before serving for optimal flavor.

Notes

Best served chilled with tortilla chips or crispy tostadas. Adding lime wedges is recommended for an extra zesty twist.
