Ingredients
- 1 lb (450g) large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Juice of 2 limes
- 1 cup cocktail sauce
- 1 avocado, diced
- 1 cup cucumber, diced
- ½ cup red onion, finely chopped
- 1 jalapeño, minced (optional for heat)
- Fresh cilantro, for garnish
- Salt and pepper to taste
Instructions
- Marinate the shrimp: In a bowl, mix olive oil, paprika, garlic powder, lime juice, salt, and pepper. Add shrimp, tossing to coat. Let it marinate for about 15 minutes.
- Grill the shrimp: Preheat your grill over medium-high heat. Skewer the marinated shrimp and grill for 2-3 minutes per side until they are pink and opaque. Remove and let cool slightly.
- Prepare the cocktail: In a mixing bowl, combine cocktail sauce, diced avocado, cucumber, red onion, jalapeño (if using), salt, and pepper.
- Combine: Chop the grilled shrimp into bite-sized pieces and add to the cocktail mixture. Toss gently to combine.
- Serve: Chill briefly in the refrigerator before serving for optimal flavor.
Notes
Best served chilled with tortilla chips or crispy tostadas. Adding lime wedges is recommended for an extra zesty twist.
