Description

Grilled shrimp with a zesty Cajun twist, perfect for summer cookouts and gatherings.


Ingredients

  • 1.5 lbs shrimp (cleaned and de-veined)
  • 2 Tbsp Cajun seasoning
  • Juice of 1 lime
  • 2 Tbsp honey
  • 2 red bell peppers
  • 1 large red onion
  • 2 Tbsp oil
  • 1 Tbsp Cajun seasoning (for vegetables)
  • Salt (if your seasoning doesn’t contain it)


Instructions

  1. Prepare skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
  2. Marinate shrimp: In a mixing bowl, combine cleaned shrimp, Cajun seasoning, lime juice, and honey. Mix well and let sit to absorb the flavors while preparing the grill.
  3. Prepare vegetables: Slice the onions and peppers into straws. Toss these vegetables in oil and Cajun seasoning.
  4. Set up the grill: Grease a veggie basket with a fine grate. Place the seasoned vegetables in the basket and start the coals. Once they’re ashed over, add the basket to the grill.
  5. Cook vegetables: Let the vegetables cook until they’re halfway done.
  6. Skewer shrimp: Skewer the shrimp onto the wooden skewers, leaving some space between them. Drizzle the remaining marinade over each skewer.
  7. Grill shrimp: Spray both sides of the shrimp skewers with oil, then grill for about 4 minutes on each side until they turn opaque.
  8. Serve: Remove shrimp and vegetables from the grill promptly to avoid overcooking.

Notes

You can substitute shrimp with chicken or tofu, and use any veggies on hand.
