Description
Grilled shrimp with a zesty Cajun twist, perfect for summer cookouts and gatherings.
Ingredients
- 1.5 lbs shrimp (cleaned and de-veined)
- 2 Tbsp Cajun seasoning
- Juice of 1 lime
- 2 Tbsp honey
- 2 red bell peppers
- 1 large red onion
- 2 Tbsp oil
- 1 Tbsp Cajun seasoning (for vegetables)
- Salt (if your seasoning doesn’t contain it)
Instructions
- Prepare skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
- Marinate shrimp: In a mixing bowl, combine cleaned shrimp, Cajun seasoning, lime juice, and honey. Mix well and let sit to absorb the flavors while preparing the grill.
- Prepare vegetables: Slice the onions and peppers into straws. Toss these vegetables in oil and Cajun seasoning.
- Set up the grill: Grease a veggie basket with a fine grate. Place the seasoned vegetables in the basket and start the coals. Once they’re ashed over, add the basket to the grill.
- Cook vegetables: Let the vegetables cook until they’re halfway done.
- Skewer shrimp: Skewer the shrimp onto the wooden skewers, leaving some space between them. Drizzle the remaining marinade over each skewer.
- Grill shrimp: Spray both sides of the shrimp skewers with oil, then grill for about 4 minutes on each side until they turn opaque.
- Serve: Remove shrimp and vegetables from the grill promptly to avoid overcooking.
Notes
You can substitute shrimp with chicken or tofu, and use any veggies on hand.
