Ingredients
- 8 oz. Pasta (farfalle or penne)
- 2 cups Tomatoes, diced (ripe cherry or grape)
- 1/2 cup Fresh Basil, chopped
- 1 cup Mozzarella Balls, halved
- 1/4 cup Olive Oil
- 2 tablespoons Balsamic Vinegar
- 1 clove Garlic, minced
- Salt and Pepper, to taste
Instructions
- Cook the pasta: Boil water in a large pot. Add pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
- Prepare the mix: In a large bowl, combine diced tomatoes, chopped basil, mozzarella, olive oil, balsamic vinegar, minced garlic, salt, and pepper.
- Combine: Toss the cooled pasta into the mixture. Gently stir until well combined.
- Chill: Let it sit in the fridge for at least 15 minutes to allow the flavors to meld.
- Serve: Give it a gentle toss before serving to make sure every ingredient is nicely distributed.
Notes
For a twist, consider using gluten-free pasta or adding avocados for an extra creamy texture. Best served chilled.
