Delightful cookies that blend the best of brownies and cookies, chewy and fudgy with rich chocolate flavor.
Ingredients
- 1 boxed brownie mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the brownie mix, vegetable oil, eggs, and vanilla extract. Stir until fully mixed and smooth.
- If using, fold in the chocolate chips.
- Drop cookie-sized portions of dough onto a baking sheet lined with parchment paper, about 2 inches apart.
- Bake for 10-12 minutes or until the edges start to set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container for up to one week, or freeze for up to three months. For a richer flavor, substitute butter for vegetable oil.
