Description
A vibrant salad featuring fresh broccoli, savory bacon, and sweet cranberries, perfect for potlucks and casual dinners.
Ingredients
- 720g fresh broccoli florets, chopped small
- 50g red onion, finely diced
- 70g dried cranberries
- 35g sunflower seeds, toasted
- 75g cooked bacon bits
- 240g mayonnaise
- 45ml apple cider vinegar
- 25g sugar (or less, to taste)
- Salt & black pepper to taste
Instructions
- Toast the sunflower seeds in a dry pan over medium heat for 2–3 minutes, stirring frequently until golden.
- In a mixing bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until well combined.
- In a large bowl, mix together the broccoli, red onion, cranberries, sunflower seeds, and bacon bits.
- Drizzle the dressing over the salad mixture and toss until every ingredient is coated.
- Cover and refrigerate for at least 1 hour to let the flavors meld. Stir again before serving.
Notes
For a lighter dressing, substitute mayonnaise with Greek yogurt. You can also use a vegetarian alternative for bacon.
