Description

A vibrant salad featuring fresh broccoli, savory bacon, and sweet cranberries, perfect for potlucks and casual dinners.


Ingredients

  • 720g fresh broccoli florets, chopped small
  • 50g red onion, finely diced
  • 70g dried cranberries
  • 35g sunflower seeds, toasted
  • 75g cooked bacon bits
  • 240g mayonnaise
  • 45ml apple cider vinegar
  • 25g sugar (or less, to taste)
  • Salt & black pepper to taste


Instructions

  1. Toast the sunflower seeds in a dry pan over medium heat for 2–3 minutes, stirring frequently until golden.
  2. In a mixing bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until well combined.
  3. In a large bowl, mix together the broccoli, red onion, cranberries, sunflower seeds, and bacon bits.
  4. Drizzle the dressing over the salad mixture and toss until every ingredient is coated.
  5. Cover and refrigerate for at least 1 hour to let the flavors meld. Stir again before serving.

Notes

For a lighter dressing, substitute mayonnaise with Greek yogurt. You can also use a vegetarian alternative for bacon.
