Description

A crunchy and vibrant salad featuring broccoli, cauliflower, bacon, and sweet raisins, all dressed in a creamy dressing. Perfect for BBQs, potlucks, and family gatherings.


Ingredients

  • 1 head of broccoli (tops only)
  • 1 head of cauliflower (tops only)
  • 8 slices of well-cooked and chopped bacon
  • 1 cup of diced red onion
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of salted and roasted sunflower seeds
  • 1/2 cup of raisins
  • 1 cup of mayonnaise
  • 2 tablespoons of fresh lemon juice (or apple cider vinegar)
  • 2 tablespoons of sweetener (sugar, honey, or a sugar substitute)


Instructions

  1. In a small bowl, mix the mayonnaise, lemon juice, and sweetener to create the dressing and set aside.
  2. In a large bowl, combine the broccoli, cauliflower, bacon, red onion, cheddar cheese, sunflower seeds, and raisins.
  3. Pour the dressing over the salad mixture and stir well to combine all ingredients.
  4. For best flavor, chill the salad in the refrigerator for at least one hour before serving. Enjoy!

Notes

For a vegetarian version, omit bacon or replace it with turkey bacon. Store in an airtight container in the refrigerator for up to 3 days.
