Description

A vibrant and crunchy salad made with fresh broccoli, cauliflower, and a creamy dressing, perfect for potlucks and weeknight dinners.

Ingredients

  • 2 cups fresh broccoli florets
  • 2 cups fresh cauliflower florets
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • 1 cup shredded cheese (cheddar or mozzarella)
  • ½ cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: Rinse the broccoli and cauliflower florets, then chop them into bite-sized pieces.
  2. Mix the dressing: In a small bowl, combine the mayonnaise, apple cider vinegar, sugar, salt, and pepper. Whisk until smooth.
  3. Combine ingredients: In a large mixing bowl, add the broccoli, cauliflower, cherry tomatoes, red onion, and shredded cheese.
  4. Toss it all together: Pour the dressing over the salad and mix until everything is well combined.
  5. Chill or serve: If you have time, let the salad chill in the refrigerator for at least 30 minutes for flavors to meld. Otherwise, serve immediately!

Notes

You can substitute Greek yogurt for mayonnaise for a lighter option or add nuts for extra crunch. This salad can be made a day in advance for better flavor development.
