Ingredients

  • 2 pounds pork sausage
  • 12 large eggs
  • 1 cup sour cream
  • ¼ cup milk
  • 2 cups shredded cheddar cheese
  • 4 green onions, chopped
  • ½ green bell pepper, diced
  • ½ red bell pepper, diced
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper


Instructions

  1. Preheat your oven to 350°F and spray a 9×13-inch baking pan with cooking spray.
  2. In a large bowl, whisk together the eggs, sour cream, milk, cheddar cheese, salt, and black pepper using an electric mixer on low speed until just combined.
  3. In a large skillet over medium heat, cook the pork sausage until browned, about 8-10 minutes. Drain excess grease and add to the egg mixture.
  4. In the same skillet, sauté the bell peppers and green onions over medium heat for 2-3 minutes.
  5. Combine the sautéed vegetables with the egg and sausage mixture.
  6. Pour everything into the prepared baking pan and bake for 35-50 minutes, checking for set edges and a slightly jiggly center.
  7. Let the casserole rest for 5-10 minutes before slicing and serving.
