A creamy and fluffy breakfast casserole loaded with eggs, savory sausage, bell peppers, and cheddar cheese, perfect for special occasions.
Ingredients
- 2 pounds pork sausage
- 12 large eggs
- 1 cup sour cream
- ¼ cup milk
- 2 cups shredded cheddar cheese
- 4 green onions, chopped
- ½ green bell pepper, diced
- ½ red bell pepper, diced
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
Instructions
- Preheat your oven to 350°F and spray a 9×13-inch baking pan with cooking spray.
- In a large bowl, whisk together the eggs, sour cream, milk, cheddar cheese, salt, and black pepper using an electric mixer on low speed until just combined.
- In a large skillet over medium heat, cook the pork sausage until browned, about 8-10 minutes. Drain excess grease and add to the egg mixture.
- In the same skillet, sauté the bell peppers and green onions over medium heat for 2-3 minutes.
- Combine the sautéed vegetables with the egg and sausage mixture.
- Pour everything into the prepared baking pan and bake for 35-50 minutes, checking for set edges and a slightly jiggly center.
- Let the casserole rest for 5-10 minutes before slicing and serving.
