Ingredients

  • 4 Salmon filets
  • 1/2 cup Bourbon
  • 1/4 cup Peach preserves or 2 fresh peaches
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 Freshly sliced peach, for garnish


Instructions

  1. Mix the marinade: In a bowl, combine bourbon, peach preserves, olive oil, garlic, salt, and black pepper. Stir until well blended.
  2. Marinate the salmon: Place the salmon filets in the marinade and let them sit for at least 30 minutes.
  3. Preheat the oven to 400°F (200°C).
  4. Prepare the salmon for baking: Arrange the marinated salmon on a baking sheet and top with freshly sliced peaches.
  5. Roast for about 15-20 minutes, or until the salmon flakes easily with a fork.
  6. Serve with the caramelized marinade drizzled over the salmon.
