Ingredients

  • For the Dill Sauce:
  • 1/2 cup sour cream (regular or dairy-free)
  • 1/4 cup mayo
  • 3 tablespoons fresh dill (chopped)
  • 1 teaspoon garlic (minced)
  • 1 teaspoon lemon juice
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • For the Blackened Salmon:
  • 4-6 salmon fillets (skin-on, 6 oz each)
  • 1 tablespoon paprika
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon chipotle pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons extra virgin olive oil (divided)


Instructions

  1. Make the dill sauce: Combine the dill sauce ingredients in a small bowl and stir until well blended. Store in the fridge until ready to serve.
  2. Prep: Preheat your oven to 400°F (200°C). Pat the salmon fillets dry with a paper towel.
  3. Make the seasoning: In a bowl, mix together all the seasoning ingredients.
  4. Oil and season the salmon: Drizzle 1-2 tablespoons of olive oil over the salmon fillets and cover with seasoning.
  5. Sear the salmon: Heat a skillet, add olive oil, and sear the salmon skin-side up for 1-3 minutes.
  6. Bake: Transfer the skillet to the oven and bake uncovered for 10-14 minutes.
  7. Serve: Remove from the oven and serve immediately with dill sauce.

Notes

For a spicier kick, feel free to increase the cayenne pepper amount.
