Description
Birria tacos are a culinary experience featuring tender, juicy meat wrapped in warm tortillas and served with a flavorful broth.
Ingredients
- 2 pounds beef chuck roast
- 2 pounds beef shank
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, quartered
- 4 cloves garlic, minced
- 1 tablespoon cumin
- 1 tablespoon oregano
- 1 teaspoon thyme
- 4 cups beef broth
- Salt to taste
- Corn tortillas
- Cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Toast the chiles: In a dry pan, toast the dried chiles for a few minutes until they become fragrant. Remove the stems and seeds.
- Blend the base: In a blender, combine toasted chiles, onion, garlic, cumin, oregano, thyme, and 1 cup of beef broth. Blend until you have a smooth paste.
- Prepare the meat: In a large pot, add the beef chuck, beef shank, and the blended mixture. Pour in the remaining beef broth and season generously with salt.
- Simmer: Cover the pot and let it simmer on low heat for 180-240 minutes, or until the meat is extremely tender.
- Shred the meat: Once tender, remove the meats from the pot. Shred them with a fork, and return them to the pot to soak up the juices.
- Warm the tortillas: Heat corn tortillas on a skillet until warm.
- Assemble and serve: Fill each tortilla with shredded birria, then serve with a small bowl of broth for dipping. Garnish with chopped cilantro and lime wedges.
