Ingredients

  • 1 cup long-grain white rice or jasmine rice
  • 2 cups water or broth
  • 1/2 teaspoon salt
  • Juice of 1 large lime
  • 1/2 cup fresh chopped cilantro


Instructions

  1. Rinse the rice in a fine mesh strainer under cold water until the water runs clear.
  2. Cook the rice in a pot with the rinsed rice, water or broth, and salt. Bring to a boil, reduce heat, cover, and simmer for 15-18 minutes.
  3. Fluff the rice with a fork and let sit for 5 minutes.
  4. Mix in lime juice and chopped cilantro.
  5. Serve warm as a side dish.

Notes

Rinse the rice well for fluffy grains. Substitute parsley if you prefer not to use cilantro.
