Description
A fresh and vibrant cilantro lime rice that elevates any meal with its zesty flavors.
Ingredients
- 1 cup long-grain white rice or jasmine rice
- 2 cups water or broth
- 1/2 teaspoon salt
- Juice of 1 large lime
- 1/2 cup fresh chopped cilantro
Instructions
- Rinse the rice in a fine mesh strainer under cold water until the water runs clear.
- Cook the rice in a pot with the rinsed rice, water or broth, and salt. Bring to a boil, reduce heat, cover, and simmer for 15-18 minutes.
- Fluff the rice with a fork and let sit for 5 minutes.
- Mix in lime juice and chopped cilantro.
- Serve warm as a side dish.
Notes
Rinse the rice well for fluffy grains. Substitute parsley if you prefer not to use cilantro.
