Ingredients

  • 3 large ripe bananas (about 1 ½ cups mashed)
  • ½ cup creamy almond butter (or peanut butter)
  • 2 cups rolled oats (gluten-free if needed)
  • 1 cup chocolate chips (dairy-free for vegan option)
  • 1 teaspoon pure vanilla extract (optional)
  • ¼ teaspoon sea salt (optional)
  • 1 teaspoon ground cinnamon (optional)
  • ⅔ cup chopped walnuts or pecans (optional)


Instructions

  1. Preheat the oven to 350°F and line a 9-inch square baking pan with parchment paper.
  2. In a mixing bowl, mash the bananas until smooth and creamy.
  3. Stir in the almond butter until fully combined.
  4. Add the rolled oats and chocolate chips, mixing until evenly distributed.
  5. Spread the mixture into the prepared pan, smoothing it out.
  6. Bake for 18 to 25 minutes until the edges are golden-brown and the center is set.
  7. Let the bars cool completely in the pan before slicing.

Notes

Use very ripe bananas for maximum sweetness and don’t skip the parchment paper for easy removal.
