Ingredients
- 1 head of lettuce, chopped
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn, canned or frozen
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 avocado, diced
- 1 cup sour cream or Greek yogurt
- 1 packet taco seasoning
- Optional: cooked chicken, diced
- Tortilla chips, for serving
Instructions
- In a large bowl or serving platter, place the chopped lettuce as your base layer.
- Layer the black beans evenly on top of the lettuce.
- Add the corn next, followed by the diced tomatoes.
- Sprinkle the shredded cheese over the tomatoes.
- Add the diced avocado as the next layer.
- In a small bowl, mix the sour cream with taco seasoning; then spread this mixture across the top layer.
- For an extra protein boost, sprinkle on the diced cooked chicken, if using.
- Serve with crispy tortilla chips on the side.
