Ingredients

  • 1 head of lettuce, chopped
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn, canned or frozen
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1 cup sour cream or Greek yogurt
  • 1 packet taco seasoning
  • Optional: cooked chicken, diced
  • Tortilla chips, for serving


Instructions

  1. In a large bowl or serving platter, place the chopped lettuce as your base layer.
  2. Layer the black beans evenly on top of the lettuce.
  3. Add the corn next, followed by the diced tomatoes.
  4. Sprinkle the shredded cheese over the tomatoes.
  5. Add the diced avocado as the next layer.
  6. In a small bowl, mix the sour cream with taco seasoning; then spread this mixture across the top layer.
  7. For an extra protein boost, sprinkle on the diced cooked chicken, if using.
  8. Serve with crispy tortilla chips on the side.
