Ingredients

  • 1 lb large shrimp (peeled, deveined, and tails removed)
  • 1 tablespoon chili powder
  • 3/4 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne (adjust to taste)
  • 3/4 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons olive oil
  • 2 mangoes (small diced)
  • 1/4 cup red onion (small diced)
  • 1 jalapeño (seeded and minced)
  • 1/3 cup cilantro (freshly chopped)
  • Juice of 1 lime
  • Salt and pepper to taste
  • 6-8 tortillas


Instructions

  1. Marinate the shrimp: Ensure the shrimp is thawed and pat dry. Toss with 2 tablespoons of olive oil, chili powder, cumin, garlic powder, cayenne, oregano, salt, and pepper, ensuring they’re well coated. Set aside while you prepare the salsa.
  2. Make the mango salsa: In a bowl, combine the diced mangoes, red onion, jalapeño, and cilantro. Drizzle with lime juice and season with salt and pepper to your liking. Mix gently and set aside.
  3. Cook the shrimp: Heat a skillet on medium-high heat and add the remaining olive oil. Once hot, add the marinated shrimp, spreading them out into a single layer. Cook for about 3 minutes on each side, until they turn opaque and curl tightly. Transfer them to a clean plate.
  4. Assemble the tacos: Warm the tortillas in a pan or microwave. Spoon the cooked shrimp into each tortilla and top generously with mango salsa. Add any additional toppings you prefer, such as avocado or shredded cabbage. Serve immediately and enjoy!

Notes

For a spicy twist, add diced jalapeños to the shrimp marinade. Use fresh ingredients for the best flavor.
