Description
A hearty and flavorful vegetarian lasagna packed with layers of vegetables and cheese.
Ingredients
- 12 lasagna noodles
- 2 cups ricotta cheese
- 3 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups spinach, fresh or frozen
- 1 zucchini, sliced
- 1 bell pepper, diced
- 2 cups marinara sauce
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Sauté garlic, zucchini, and bell pepper until soft.
- Add spinach and cook until wilted. Season with salt and pepper.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Layer 3 lasagna noodles, half of the ricotta mixture, half of the vegetable mixture, and a third of the mozzarella cheese. Repeat.
- Top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
- Bake covered with foil for 30 minutes, then uncover and bake for an additional 15 minutes or until cheese is bubbly.
- Let it cool for 10 minutes before slicing and serving.
Notes
For extra flavor, add herbs like basil or oregano to the marinara sauce.
