Description

A hearty and flavorful vegetarian lasagna packed with layers of vegetables and cheese.


Ingredients

  • 12 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, fresh or frozen
  • 1 zucchini, sliced
  • 1 bell pepper, diced
  • 2 cups marinara sauce
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions. Drain and set aside.
  3. Heat olive oil in a skillet over medium heat. Sauté garlic, zucchini, and bell pepper until soft.
  4. Add spinach and cook until wilted. Season with salt and pepper.
  5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  6. Layer 3 lasagna noodles, half of the ricotta mixture, half of the vegetable mixture, and a third of the mozzarella cheese. Repeat.
  7. Top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
  8. Bake covered with foil for 30 minutes, then uncover and bake for an additional 15 minutes or until cheese is bubbly.
  9. Let it cool for 10 minutes before slicing and serving.

Notes

For extra flavor, add herbs like basil or oregano to the marinara sauce.
